Chocolate Blueberry Pie

We've been busy  picking organic blueberries outside of New Hamburg, ON. The U-Pick Farm is currently open everyday, except fridays, from 8:00 am to 2:00 pm. The # for directions is 519-662-2558 . 




Ingredients:

Crust
200 g Almonds
150 g Oat Groats
150 g dried Apricots, soaked in purified water for 2-4 hours
1 Pinch Himalayan Salt
10 g Cacao Butter

Filling
150 g Cashews
2 Tbs Raw Cacao Powder
400 g Blueberries (about 3 cups)
2 Tbs Maple Syrup
1 Tbs Coconut Oil
1 Tbs Cacao Butter, grated
Pinch of Salt
Vanilla

Topping
250 g Blueberries

Method:
  • grind almonds and oats on Speed 10
  • add drained apricots, salt and cacao butter and mix 30 Sec / Speed 5
  • line a tart dish with Saran wrap, press dough on top, dehydrate for 2 hours.
  • remove the tart shell from the pan and dehydrate ( or oven lowest temperature) for another 2 hours or over night until crisp
  • grind cashews and cacao 10 Sec / Speed 5
  • add remaining ingredients for the filling and blend creamy on Speed 5-6
  • Pour filling into dehydrated pastry and decorate with blueberries
  • Let set in freezer for at least an hour before serving

Variation:
Use 230 g almond pulp and 130 g oat flour ( soaked grains, dehydrated and ground) instead oat groats and almonds

Rinse your TMX bowl with some milk ( dairy or non dairy) and enjoy some blueberry milk.
This pie keeps for a couple of weeks in the freezer, just defrost 30 min before serving

Lila Schokoladenkuchen

Zutaten:

Boden

200 g Mandeln
150 g Hafer
150 g getr. Aprikosen, 2-4 Std eingeweicht
1 Pr. Himalaya Salz
10 g Kakaobutter

Füllung
150 g Cashews
400 g Blaubeeren
2 EL Ahornsirup
2 EL Kakao ( gem. Kakaobohnen oder Nibs)
1 EL Kokosoel
1 EL Kakaobutter, geraspelt
Prise Salz
Vanille

250 g Blaubeeren zum Belegen

Zubereitung:
  • Mandeln und Hafer auf Stufe 10 mahlen
  • abgetropfte Aprikosen zugeben und ca. 30 Sek./Stufe 5 zu einem Teig verarbeiten
  • in einer mit Folie ausgelegten Tarteform ausrollen und 2 Std niedrigste Temperatur Backofen oder im Doerrapparat trocknen
  • Folie abziehen und ohne Form weitertrocknen
  • die Zutaten fuer die Fuellung auf Stufe 5 cremig ruehren und in die Form streichen und mit Blaubeeren belegen. Fuer mind. 1 Std in den Gefrierschrank stellen
Variante:
Die Mandeln und Haferkoerner durch 230 g Mandelpulpe und 130 g Hafermehl ( Koerner eingeweicht, getrocknet und gemahlen) ersetzen


Den Mixtopf nicht spuelen, ergibt mit Milch ein schoenes lila Mixgetraenk

Die Tarte haelt ewig im Gefrierschrank. Vor dem Verzehr 30 Min aus dem Gefrierschrank nehmen. Der Boden ist nicht sehr suess, harmoniert aber wunderbar mit der Fuellung.

    I have a couple of questions regarding the crust:
    - can you suggest an alternative to the plastic? I don't cook with plastic, especially not at warm/high temperatures. Parchment paper?
    - how do you 'dehydrate' overnight? In your German recipe you suggest a dehydrator - but mine won't accommodate a pie shell. If using the oven (as you also suggest in your German portion), how long do I go after the initial 2 hours at lowest temperature?
    - is there a reason to take it out of the pie shell, or can you continue to dehydrate in the shell?
    Oh, and one more for the filling: is it OK to use frozen blueberries? I am assuming once I defrost them, I could substitute them. They do, however, have a different texture, hence my question.

    This cake looks amazing, and I can't wait to make it.

    1. Hi Bec,

      Thanks for asking. Ups... I forgot that I remove the foil after 2 hours and changed it in the recipe. I remove the shell from the pan to get it crispier, but you can leave it in or skip the drying part completely. Yes you Can use frozen blueberries, no need to defrost since you put it back in the freezer. I hope this helps and you enjoy the pie!
