Turmeric Coloured Easter Eggs

This is another way of colouring pre-boiled easter eggs naturally using fresh turmeric root. You might consider wearing kitchen gloves while handling turmeric rhizomes.








Ingredients:
Raw Eggs (room temperature)
Fresh Turmeric

Coconot Oil

Method:
  • Steam your eggs with 500ml water for 14 min / Varoma / speed 1 in steaming basket or with 800ml water for 20 min / Varoma / speed 1
  • Rinse under cold water to cool
  • Slice the turmeric root with a vegetable peeler and rub on the eggs
  • Wait until they are dry and rub a coat of coconut oil over the eggs

Kurkuma gefaerbte Ostereier
 
Mit dem im Kurkuma enthaltenen Farbstoff lassen sich sich Ostereier wunderbar natuerlich faerben. Allerdings sollte man mit Handschuhen arbeiten. Die Verfaerbungen an den Fingern verschwinden aber nach 2 Tagen von alleine.
 
Zutaten:
Eier
Frische Kurkumawurzel
Kokosoel
 
Zubereitung:
  • Eier mit 500ml Wasser fuer 14 Min. / Varoma / Stufe 1 im Gaerkoerbchen oder mit 800ml Wasser fuer 20 Min / Varoma / Stufe 1 im Varomaaufsatz garen und kalt abschrecken
  • Mit dem Gemueseschaeler vom Kurkumarhizom Streifen abschneiden und die Eier abreiben.
  • Trocknen lassen und mit Kokosoel einreiben

Maple Marzipan

Making almond paste is so simple:




Ingredients:
200 g Almonds, soaked overnight and peeled
6-7 Apricot Seeds, soaked and peeled
110 g Maple Sugar

Method:
  • Grind the maple sugar 10 sec. / speed 10
  • Add almonds and apricot seeds 25 sec / speed 9-10
  • Scrape down with spatula and blend for 2 min / 37°C / speed 3
  • Let set in the fridge - keeps forever - for a while
  • Divide marzipan into equal size pieces, form and roll marzipan balls in cacao powder, cinnamon or coconut flakes 
Variation:  use honey instead maple sugar




Marzipan Rohmasse

Zutaten:
200 g Mandeln, ueber Nacht eingeweicht und geschaelt oder blanchiert
6-7 Aprikosenkerne / Bittermandeln, eingeweicht und geschaelt
110 g Ahornzucker

Zubereitung:
  • Ahornzucker 10 Sek /Stufe 10 mahlen
  • Mandeln und Aprikosenkerne zugeben und 25 Sek / Stufe 9-10 mahlen 
  • Masse mit dem Spatel nach unten schieben und fuer 2 Min / 37°C / Stufe 3 ruehren
  • Die Masse im Kuehlschrank einen halben Tag durchziehen lassen. Kugeln formen und in Kakaopulver, Zimt oder Kokosraspel wenden
Variante: Honig anstatt Ahornzucker

My Sisters New Year's Pretzel

Happy new year and best wishes for 2011! Growing up in Germany we always had these pretzels for New Years Eve.  At midnight everyone gets a piece for good luck in the new year. A few years ago my sister shared her recipe with me:







Ingredients:
330 g Milk ( dairy or non-dairy)
20 g Fresh Yeast
80 g Butter
10 g Salt
500 g Flour (unbleached, all purpose or white spelt)
1 egg yolk

Method:
  • warm milk, butter and yeast for 2 min  / 37 °C / speed 2 
  • add flour and salt
  • blend on speed 3-4 together. Set dial to closed lid function and knead for 2 min  / Intevall speed 
  • let the dough rise double in size
  • form a pretzel shape with 2 / 3 of the dough and a braided loaf with the other part. Put the braided loaf on top of the pretzel and let rise covered with a clean dish towel for another 30 - 45 minutes.
  • Heat oven to 350°F / 175°C. Make an eggwash with the yolk and 3 Tbs of water and brush the pretzel with it. Bake for 20 - 30 minutes.


Neujahrsbrezel

330 g Milch
20 g Hefe
80 g Butter.............................. 2 Min   / 37 °C / Stufe 2 erwaermen


500 g Mehl
10 g  Salz.................................auf Stufe 3-4 kurz verruehren und 2 Min / Knetstufe


1 Eigelb


  • Teig doppelt aufgehen lassen
  • mit 2 / 3 vom Teig eine Brezel formen, mit dem Drittel einen Zopf flechten und auf den Zopf legen
  • 30 - 45 Minuten gehen lassen 
  • Eigelb mit 3 EL Wasser mischen und den Teig damit bestreichen
  • bei 175 °C ca. 20-30 Minuten backen

Silk-Dyed Eggs







Easter is around the corner and I was dreaming: Martha Stewart, Oprah and I steaming some coloured eggs...lol. Too bad, she knows already about this technique.
My friend Hans shared almost 3 years ago his Family-Easter-Eggs-Dyeing-Event with me. They wrapped eggs with ugly, old pieces of silk from ties/scarves/old blouses and placed them in boiling water with vinegar. The silk was reused the other year.
I'm going to show this technique some TMX-Users and better check out the Thrift Store. My husband is not too happy to give more of his ties away.
Now, this is my way using the Varoma and the Thermomix:

Ingredients:
Raw Eggs ( room temperature)
100% Pure Silk Ties - lining removed
Yarn
Oil

Method:
  • Cut silk in pieces -large enough to cover one egg- and moisten them with water
  • Wrap silk -right side/print facing- with yarn around the eggs
  • Place in the Varoma, add 800 ml of water in the TM-bowl and steam for 2o min/Varoma/speed 1
  • Rinse under cold water and remove silk from cooled eggs
  • Wipe them -for shiny eggs- with some Coconut Oil or any other oil

  • 20 Min/Varoma/Stufe 1 garen
  • kalt abspuelen, abwickeln, einfetten und fertig
